Bonus Recipe
Chicken Casserole
8 slices day old bread
2 cups diced cooked chicken
½ cup onion, chopped
½ cup green pepper, chopped
½ cup celery, chopped fine
½ cup mayonnaise
¾ teaspoon salt
¼ teaspoon black pepper
4 eggs slightly beaten
1½ cups milk
1 can condensed cream of mushroom soup
½ cup Cheddar cheese, shredded
Butter 2 slices bread and cut into 1 inch cubes and set aside.
Cut remaining bread into 1 inch cubes.
Place half of the unbuttered cubes in the bottom of
a greased 8x8x2 inch baking dish. Combine chicken, vegetables, mayonnaise, and seasonings:
spoon over bread cubes in baking dish. Sprinkle remaining
bread cubes over chicken mixture (including the
buttered ones).
Combine eggs and milk and pour over all. Cover and chill over night. Spoon soup over top.
Bake at 325 degrees for 50 minutes; or until set. Sprinkle the cheese over top the last
few minutes of baking.
Yield: 6 to 8 servings
Try to set the casserole out for about an hour before baking.
