SPINACH DIP WITH FETA CHEESE
5 tbsp olive oil
6 oz baby spinach leaves
1 cup crumbled feta cheese
3/4 cup sour cream
1 tsp minced garlic
1/2 tsp grated lemon peel
Heat 1 tbsp olive oil in a skillet over medium to high heat, add spinach, toss until wilted but still bright green - about 3 minutes. Transfer to colander and press out excess liquid. Turn spinach onto work surface. chop coarsely. Combine 4 tbsp oil, feta cheese, sour cream, garlic and lemon peel in processor. blend until smooth. Transfer to bowl. Mix in spinach. Season with salt and pepper. Cover and chill.
Place in bowl and serve with breadsticks and veggies.
